1 large sweet potato, peeled and sliced ¼” thick
1/2 medium apple, peeled, cored and sliced
1 medium parsnip, peeled and chopped
2/3 cup cauliflower flowerets
2 Tbsp raisins
2 Tbsp. stock or orange juice
ground ginger
ground nutmeg
ground coriander
curry powder
Cut a large (about 18”x18”) square of aluminum foil. Place sweet
potato slices in the center of foil. Alternate apple slices between sweet potato slices. Cluster parsnip and cauliflower around
them. Scatter the raisins on top. Sprinkle
lightly with each of the spices (less than 1/8 teaspoon of each). Add the stock. Fold
up the sides of the foil to make a tightly closed packet. Bake at 350°F for about 35 minutes.
Note: I think this would be good with a few chopped peanuts added.
